The best part is the sheer simplicity of using the Sous Vide method with AEG's vacuum drawer to infuse the flavours together. Cooking the carrots in the SteamPro oven, using the Sous Vide function, they will be ready to be served straight from the Sous Vide bag.

 

6 medium carrots

1 stalk lemongrass

1% salt (by weight of prepared carrots)

1/2 tsp freshly ground white pepper

50 g butter

  1. Peel the carrots
  2. Slice into 5 mm slices
  3. Cut the lemongrass into 10 cm lengths & crush each stalk
  4. Place into a Sous Vide bag with the carrots, salt, pepper & butter
  5. Seal on full pressure
  6. Steam at 85°C on Sous Vide function for 1.5 hours
  7. Serve in a heated bowl with the lemongrass
